Caribbean curry travelled to Jamaica with Indian indentured labourers in the nineteenth century and became something distinct along the way. The spice blend is turmeric-forward and less sweet than most South Asian curries, and it is finished with local aromatics — thyme, scallion, allspice and scotch bonnet — that give it a herbal, savoury edge.

Ours is simmered until the chicken is tender and the sauce has body, then plated with rice and peas and a side. If you like this, the same curry base carries our curry goat and our curry shrimp.
